This root vegetable soup is a hearty and nutritious soup that is perfect for chilly winter days. Loaded with root vegetables, it's packed with vitamins and minerals, and it's easy to make. With its warm and comforting flavours, it's sure to become a favourite in your household.

Nutritional Information

In a deep hot pot heat oil and sauté onion and garlic. Add cumin seeds, bay leaves and tomato paste. Gently stir, add in celery sticks, carrots, butternut, potatoes, frozen peas, tomatoes. Pour in vegetable stock, season with salt and pepper. Let it simmer for 20 – 30 minutes or until vegetables are soft.

  • 1 tbsp. cumin seeds
  • 2 bay leaves
  • 60g tomato paste
  • 2 celery sticks, chopped
  • 2 large carrots, chopped
  • 250g cubed butternut
  • 2 medium potatoes, cubed
  • 1 cup frozen peas
  • 4 tomatoes, roughly chopped
  • 500ml vegetable stock
  • Salt and pepper
